Sweet Potato Summer



















This past year has been quite an experience living with one vegan house-mate and three vegetarian house-mates. I have always loved food and cooking food, but cooking has such a different meaning when you not only know where your food comes from, but also experiment with different ways of cooking. To start off our wonderful blog, I wanted to share with you a wonderful recipe, one that can be modified for vegans, vegetarians, and meat-lovers alike, Black Bean Sweet Potatoes Burritos.

I added curry, chili powder, and spinach to my burritos for fun. For those who are vegans, cheese can easily be taken out and for those who want some more protein, chicken or some venison I am sure would be a wonderful addition to this meal. I would pair it with spinach and salsa salad or some cilantro and lime rice for a complete dish!
